Bistro Provence's French food truck ready to hit the road
Jean-Philippe and Genevieve Guy, owners of Houston's 14-year-old Bistro Provence restaurant, will debut the city’s first all-French mobile food truck, L’es-Car-Go, in mid-April.
The gourmet kitchen on wheels will offer French cuisine with a Texan twist to area business complexes and at special events where mobile food services are needed. The menu will change regularly and feature different soups, such as French onion or gazpacho, and sandwiches, such as Le Steak Classic, a New York Strip with sautéed mushrooms and shallots; Le Cordon Bleu, a hot sandwich with chicken breast, ham, Swiss cheese and an olive-garlic tomato sauce; Le Vegetarien, with lettuce, roasted tomatoes, zucchini, eggplant, onion, bell pepper, garlic and avocados; and the classic Le Croque Monsieur, with ham, melted Swiss Cheese and Béchamel.
The food truck will also feature escargot dishes, including an escargot pocket pita, a halved pocket pita filled with escargot, roasted corn, black beans, lettuce, tomatoes, avocados, cilantro and yogurt sauce; escargot beignets; and escargot popcorn, almond-crusted escargots tossed with hot sauce.
Although the mobile food truck will be operating by middle of April, there will be an official viewing on Thursday, May 24 in front of Bistro Provence, in observance of National Escargot Day.
